Leveraging Artificial Intelligence for Sustainable Food Systems
On October 23 and 24, 2024, we held the CORE Summit at UC San Diego, where researchers and practitioners from multiple disciplines and sectors convened to discuss the challenges and opportunities in creating more sustainable regional food systems. This two-day event was organized by the CORE Institute in collaboration with the 2024 CORE Fellows.​

We were thrilled to welcome Dr. Shefali Mehta as our keynote speaker on October 23! Dr. Mehta is an Associate Professor at the University of Minnesota’s School of Statistics. She has served in roles across private, public and non-profit sectors including McKinsey, Syngenta, the National Corn Grower’s Soil Health Partnership and as Deputy Under Secretary of Research, Education and Economics and Acting Chief Scientist of the US Department of Agriculture (USDA).

Dr. Shefali V. Mehta is the founder of Open Rivers Consulting Associates, a science & technology and management consulting firm that emphasizes the environment and holistic wellness.
